1 large onion, finely chopped
1 large green pepper chopped
1 tin green beans or cooked fresh beans
1 tin baked beans
1 tin butter beans, drained
1/4 to ½ cup (60-125ml) sugar
½ cup (125ml) vinegar
¼ (60ml) oil
8 teaspoons dried sweet basil
Finely chop the onions and green pepper. Fry till soft in a little oil. Add the beans, sugar, vinegar and oil to the cooked onion mix and allow to simmer for 5 minutes. Add the basil and mix through. Allow to cool then refrigerate.
This salad should keep in the refrigerator for at least one week.
